Pikachu Cupcakes

This little yellow guy never looked so good to eat. Try these Pikachu cupcakes for your next Pokemon party, or to simply surprise the Pikachu fan in your house. Pikachu is a much loved character from the Pokemon series which began in 1992 and is running strong still today. From cartoons to card tournaments, this little guy is everywhere!

Pokemon CupcakeIngredients:
Cupcakes
125g soft butter
1 1/2 cups self-raising flour
1/2 cup caster sugar
1 tsp vanilla essence
2 eggs
1/2 cup milk
dozen yellow patty cases
Baking paper

Icing and Decorations
1 packet of yellow fondant to cover the tops of the cupcakes. Buy a packet of white from Coles then colour with yellow food colouring.
M&M’s for eyes.
Red fondant for cheeks. I suggest you buy the colour fondant pack from Coles. It has just the right amount of red in it to do the cheeks and will help you to avoid trying to make red fondant which can be difficult.
Icing pens white, black and red.
Wafer biscuits for ears.
About 30g of chocolate for tips of ears.

Method:
Cupcakes – Preheat oven to 160C, beat the butter, sugar and vanilla until pale. Add eggs, one at a time, then the flour and milk, stir well until combined. Spoon mixture into patty cases and bake for 20 minutes. (Monitor till turning golden) Ensure cooled before starting your icing and decorating.

Icing and Decorations – Roll out your yellow fondant onto baking paper and cut circles a little bigger than the size of your cupcakes so you can fold your fondant over the edge. Once fondant on the cupcake, you can use the back of a spoon to smooth out any bumps or small creases.

Melt a small amount of chocolate, 30grams will easily do it. Then takes your wafers cut into thin strips with a point at the ends and dip the tips in. Put aside to cool.

Take a knife and slide it into the cupcake in two places where your wafer ears will go. When the chocolate is dry enough on the ears, now slide your wafer biscuits into the sides at the top of your Pikachu. Ensure you push them in a good way to help with stability.

Now roll our your red fondant onto the baking paper and cut small circles for the cheeks. Place on.

Press the M&M eyes into the cake gently where you want them so they make an indent. Now put a small blob using the icing pen under each M&M so it sticks to the cupcake.

Using your black icing pen draw your mouth and colour it in with red icing pen. While you have the black icing pen in hand, do your nose.Pokeball cupcakes

Put a tiny white dot with your white icing pen onto Pikachu’s eyes.
