Pool Party Food Ideas

So it’s summer and you’re ready to start enjoying the heat with your friends. What better way than to host a pool party? Chill out, soak up some rays, and while you’re at it why not show off your cooking skills too? Here are some simple yet sure-fire pool party favourites.

Greek Salad Skewers
Think classic shish-kabobs meets healthy summer salads – this quick and simple summertime snack is easy to make, super easy to eat, and as healthy as it is delicious. You can vary the ingredients and add in any of your favourite salad items, but this time we’re going for Greek flavours.

Slice up a cucumber and cut a block of feta into cubes, then cut a punnet of cherry tomatoes into halves. Slice up some red onion too, throw in some black olives, then toss it all up with a dash of olive oil and red wine vinegar, plus some freshly chopped oregano. Then, on a wooden skewer, or a toothpick for more bite-sized snacks, skewer some of each ingredient and voila, you’ve got salad on a stick! Easy to handle and great for your insides!

Cool Fruit Cup
These healthy little snacks are not only great treats but they look simply fantastic! Throw into a large bowl an assortment of your favourite summer fruits – this time we’ve chosen blueberries, raspberries, strawberry slices and diced mango. Chop up some fresh mint and a dash of Pimms or Limoncello (leave the alcohol out if there will be kids at the party, of course). Toss it all together and leave it in the freezer for about half an hour. When you’re ready to serve, spoon your fruit mixture into clear plastic cups (short plastic wine cups work best) and serve on a large dish or tray full of ice. For the real health nuts, sprinkle some chia seeds and goji berries on top – or to be a little devilish, garnish the top with a dollop of cream and some shaved dark chocolate.

Super Simple Nachos
These nachos are super easy to whip up and always a big hit at parties, they’re easy to share around and they never last long! You can vary the amounts based on how many people you have to feed. Simply lay out the corn chips into an oven-safe baking tray, cover in a layer of cheese and bake until the cheese is melted. While the cheese is melting, dice up a red onionPool Party Food2 as many tomatoes as you’ll need to cover the chips, then combine the onion and tomato with some chopped coriander. Once the cheese is melted, take the chips out of the oven and on top of the cheese, spoon a layer of sour cream, then layer on the tomato and onion mix. You can dollop some guacamole over the top too, if you want. And it’s ready to serve!

Kofta Balls
These delicious bite sized snack are great hot finger-food for any poolside bash. For this recipe we’ll use lamb mince but you can use beef if you’d prefer. Chop up some fresh parsley and mix it into your lamb mince with some salt and pepper. Roll the mince into marble-sized balls until it has all been used up, then pan-fry the balls until cooked through.

Mix some finely chopped mint and a dash of lemon juice into some Greek yoghurt and distribute the yoghurt into small plastic shot glasses, a dollop in each (you can find these with the other party cups in the supermarket). Skewer the balls onto toothpicks and plop each one in a cup with the yoghurt for serving. Yum!
