Toblerone and Baileys Mousse

This is not just your average chocolate mousse! Hidden inside you will find heaven in a world of Toblerone chunks along with a hint of Baileys Irish Cream.

Toblerone and Baileys MouseWhat you will need:
600g dark chocolate
2 tablespoons cocoa powder
500ml double cream
3 tablespoons of Baileys Irish Cream
6 eggs
2/4 cup caster sugar
200g Toblerone bar (min)
Vanilla ice-cream
Wafer Straws (I used Fun Sticks)


1. Take your Toblerone bar, and break it up into small chunks no bigger than 5c pieces and set aside.

2. Heat your dark chocolate in a bowl on the stove over hot water till melted. Set aside to cool for about 10 minutes.

3. In another bowl, place your 6 eggs and sugar and beat with a mixer for approx 5 minutes.

4. Take your melted chocolate now cooled a little and mix it into your egg and sugar along with your cocoa. Ensure your ingredients are combined well and add your Baileys to the mix. Stir.

5. Now pour your double cream into the melted chocolate folding it in gently as you need to keep the mixture light. At this time, also fold in your chunks of Toblerone.

6. Place your Toblerone and Baileys Mousse into jars or glasses and chill for around 90 minutes.

7. Once chilled, serve with ice-cream, wafer straw and Toblerone piece.
